During the Fall we have crockpot meals on repeat. I love making different kinds of soups and chilis. Put everything in the crockpot, go about your day, and have a delicious meal waiting for you when you get home! This one is a super easy chicken chili and it's one of our favorites. What you need:
-Rotisserie chicken (I'm lazy so I just buy a pre-cooked rotisserie chicken and shred it)
-1 onion, chopped
-16 oz can black beans
-16 oz can kidney beans
-16 oz can tomatoe sauce
-2 small cans of corn
-2 14.5 oz cans of tomatoes with chills
-1 packet of taco seasoning
-1 tablespoon of cumin
-1 tablespoon of chili powder
Mix everything together without draining cans. Cook in crock pot on low for ~10 hours or high ~6 hours. I usually top mine with a little bit of shredded cheese and sour cream and serve with tortilla chips. The perfect Fall meal. Yum!
