We had a class cookout last night so I decided to whip up some homemade "salsa". Not exactly your normal salsa because it doesn't have any tomatoes in it, so I guess it's considered more of a bean-and-corn dip. Perfect for summer and so simple! All you need is:
-2 cans of black beans, drained and rinsed
-1 can of corn, drained
-1/2 green pepper
-1/2 red pepper
-1/2 purple onion
-1 bunch green onions
-1 tsp minced garlic
-1 tsp salt
-8 oz bottle Ken's Lite Olive Oil Vinaigrette
Mix together, chill, serve with chips.
I have been beating myself up over this whole blogging thing lately. You see, I don't like doing anything unless I'm doing it 110%, and I don't feel like I am giving that to my blog. Trying to juggle school and marriage and family and a semi-social life is hard. Nobody wants to hear me ramble on about studying congestive heart failure and which antibiotics are best to treat pneumonia. But this is what my life currently revolves around.
Luckily, my real-life turned blog friend Meghan has been encouraging me to keep it up. I am constantly texting her for blog help and advice! Thankfully, she has convinced me to just do my best on this blog, keeping in the back of my mind that I will have much more time to devote to it after graduation in December. I never want this blog to feel like a nuisance, so I will post when I can without stressing out when I can't.

Does anyone else swoon over Twine & Twig's necklaces? The other day I thought I'd reward myself with one of them until I saw the price tag. $230 for a necklace? WTF. I guess I will keep dreaming. If they were

ReplyDeleteI struggled with the same feeling about blogging. Then I realized that I created the blog for myself and no one else. I was doing a post everyday when I cut back to Mondays, Wednesday and Fridays and it's been great because im excited to share the posts because I have more time to put into my posts. Your doing a great job juggling all aspects in your life! Don't forget to give yourself a break every now and then.
