I am DONE with my psych rotation! Up next: emergency department. But first I am headed to Charlotte for the weekend to see my sweet bff and meet her new baby! Can hardly contain my excitement!!! What could possibly be better than catching up with your sweet friend and having lots of baby snuggles? I'm sure there will be lots of champagne mixed in too :)

I made a couple dinners to freeze and take to my friend for them to eat later, and this is one of them. So easy! All you need is:
-Rotisserie chicken (can also use grilled chicken but this is SO easy)
-Uncle Ben's long grain & wild rice
-1 can of cream of mushroom soup
-16oz Jimmy Deans sausage
-Shredded sharp cheddar cheese
1. Cook rice according to directions
2. Cook sausage; drain
3. Combine rice, sausage, cream of mushroom, and chicken. I use basically the whole rotisserie chicken.
4. Put in casserole dish and sprinkle with sharp cheddar cheese
5. Cook in oven on 350 degrees for about 45 minutes, or until warm and bubbly
This is perfect with a spinach salad and green beans, that's how we usually have it!
FYI: I put mine in a disposable aluminum foil casserole dish and froze it to take to a friend. If you do this, just let thaw then cook on 375 for about 45 minutes or until warm.

I've been looking for something simple to go above a painting in our kitchen. I found these two arrows at a local store last week and knew they'd be perfect! I am so happy with the touch they add.
